Fruit Pie with Crumb Topping


Yesterday morning I was half way watching our a cooking show on our local Public Broadcasting Station. The chef was finishing up this fruit pie (blueberries) with crumb topping. It looks so yummy and if not for my broken stove I would have made it today. But then I realized what was involved. This pie takes 1 1/4 hrs to cook AND 6 hrs to cool. I have never heard of such a thing. I'm sure there are lots of pies that take a long time to cool but I've never known of one to take 6 hrs.

My favorite vegetable in the world is asparagus. I not too crazy about other vegetables so I sacrifice and buy this. I will pay as much as $4.00 for a bunch if I have to just so that I can have my weekly asparagus meal.

I typically steam it and then chill it. I then but into pieces for my salad. It provides a great crunch to my grilled chicken salad. And it is so nutritious

My stove is not working and I've had to depend on my microwave for everything. So for this I just cooked it in the covered dish with a small amount of water. Bada bing bada bang...it was ready in about 6 minutes.

Chili's Southwestern Egg Rolls

Have you ever tried the Southwestern Egg Rolls from Chili's Bar & Grill? Oh my gosh!! If you haven't tried them, you are missing out on some fabulous food. Actually they can be eaten as an appetizer or a meal. There are 3 huge egg rolls cut in half and served with a wonderful ranch dressing. When I eat them I always eat them as a meal.

Today I worked with one of my co-workers and we ate at Chili's for lunch. I had these wonderful little appetizers for my meal. Yummy!!!! I couldn't eat all of them at lunch so I finished them off later in the day.

My Favorite Fast Food ....Chick-Fil-A


My favorite fast food is Chick-Fil-A. Yummy!! Yesterday I didn't have time to cook anything and I just happen to have a Chick-Fil-A near my house. While out running some errands I picked up my favorite food there - Kid's 4 piece nuggets. I always get this. Well most of the time. Maybe one other time I tried one of their sandwiches but I decided I like this better. This item includes waffles fries and 4 nuggets with my choice of a beverage. Since I don't drink soft drinks any longer I got ice tea.

Fudge Brownies

Last week I had a craving for brownies. I bought a box mix at the grocery and prepared them according to the directions on the box. I overcooked them a bit but they still didn’t taste good. However, I did eat every morsel.

Then yesterday I still had the cravings so I decided to make some from scratch as I didn’t want to go back to the grocery store for another boxed mix.

These turned out awesome. From these pictures you will notice there are only 4 on the plate. Well I’ve eaten the others all myself. I cooked mine in an 8” square pan and cut them into 9 pieces. These are just plain basic brownies with nuts. But they are so yummy!! Here’s the recipe: This is from my Betty Crocker cook book.


Fudge Brownies
½ cup margarine or butter
2 ounces unsweetened chocolate
2 eggs
1 cup sugar
1 t vanilla
¾ cup all purpose flour
½ cup chopped nuts

Grease 8X8X2 inch baking pan; set aside. In a medium saucepan melt butter and chocolate over low heat. Remove from heat. Stir in eggs, sugar, and vanilla. Using a wooden spoon, beat lightly just till combined. Stir in flour and nuts.

Spread batter in prepared baking pan. Bake in a 350 degree oven for 30 minutes. Cool on a wire rack. Cut into bars. Makes 24 brownies.

** I baked mine for 25 minutes in an 8” square pan.

Caramel, Chocolate, Pecan Delight

Do you like caramel syrup? Do you like chocolate syrup? Do you like whipped cream? Do you like pecans or walnuts? Well....guess what!?!?! This desert is just heavenly and made from all four of those ingredients. I created this luscious treat several years ago. I forgot all about it until this week and I needed something to quench my sweet tooth. I had all the ingredients so....bada bing, bada bang....before I could blink my eye (it's so very quick and easy to make) I had it made and was salivating as I ate each spoonful. For this picture I was out of pecans so I used walnuts and it's just as yummy.

Start with a spoonful or two of Cool Whip. Then dribble chocolate syrup over it. Then dribble caramel syrup over that. Now sprinkle lots of chopped pecans or walnuts over all of that.

WOW.....yes it is very rich so eat is slowly. Enjoy!!!
